Nice batch, Daniel! How thick are those choppers (wow!), and how do you sharpen your blades?

Paul, I sharpen with a series of belts: 60, 120, 220, 320, 600, cork belt/green chrome, leather strop/pink scratchless. Sometimes I use scotchbrite belts to blend a convex.

I have been using the same setup for a little while and while I could get them sharp before now that my technique is improving they are really sharp!
