I know Schrade has closed its Irish facility but there´s surely some of these hollow handled knives around and the idea should work for any similar knife.
The plastic covers on these are not particularly tough, I´ve replaced a couple broken ones before by taking off the sheet metal pieces and epoxying on wood scales, but when the Barlow broke I wanted to save the bolsters for looks and thought about molding new covers.
So I finally got to do it, I had some very old two part epoxy putty, black and white which is supposed to blend gray, it was kind of dried out from age but could still be molded somewhat, I knew it would dry out hard so I used it, basically making some small balls and pressing them on, then blending it all together. The final product came out fine, with a marbled look due to the poor blending of the semi-dry putty, here´s a picture (for forum content, the background is a T-Shirt from the Mexican TableTennis Federation):
