My thinnest knife ever!

This one is 10 3/4" OAL with a 6 1/4" Blade. S35vn full convex grind with zero convex edge. Thickest part of the convex is .038 which is less than 1mm :eek: Handles are olive linen with yellow liners. It can easily whittle hair and goes through hard potatoes like butter.

Yeah I know my technique sucks so shush!!. Setting the cutting board on the edge of the sink and countertop doesn't help either :D

I've made a few knives out of 52100 that were almost that thin. They are EXTREMELY flexible and super sharp. Just wondering, how flexible is the S35VN at that thickness? Nice knife, excellent fit and finish.

It can take a pretty significant bend and still spring back to true. Pretty tough stuff.

As I was cleaning up the finish with an old fine scotchbrite belt the spine caught onto the half torn splice of the belt. This propelled the knife forward right into the aluminum platen holder. Luckily not body parts were in front of the knife when this happened. As can be seen from the pics the knife took a deep bite into the aluminum and suffered a decent rolled edge. I was surprised to find that the edge did not chip out. It probably has to do with the toughness of both the convex edge and S35vn.

sure it cuts aluminum, but how is it on veggies :)

Well then you will have to check out the potato slicing video ;) It cuts better than any kitchen knife that I have ever used. Goes through food stuff with minimal effort.

Guys, I had Pohan making me 1/8" stock slicers from the beginning. Just sayin.

Yeah, how much for one of those? I've been looking around for a thinner santoku, mine is a Whustof. It's okay, but the handle is cracking.
 
crazy shit!!! i have some thin s35vn on order i promissed my dad id make him a slicer for eons. doubt mine will be as nice though!!
 
Awesomely impressive, Ban. Aside from my dislike of Micarta and G10, it's a gorgeous knife with appropriately thin dimensions.

Did you use a surface grinder to thin or all by hand?

Everything was ground by hand on a belt grinder.
 
I've noticed that most factory kitchen knives are around 1/32" thick. Impressive to see one that thin that is custom! How was the S35VN to grind on and finish?
