In the search for that perfect knife, I found these three are close. Although, I will never find it?? (perfect knife) I place them in order of best apple slicer. All, as you see are 3" blades, the most used size for me.
Calypso Jr:
By far the best slicer, it cuts like a laser. I don't mind the plastic handle, it's a good fit for my hand. The clip though, was too big and a tip down. I fitted a tip up of my own design. Now it's darn near perfect.

Ritter Grip-Mini:
There is nothing better for smoothness and ease of operation than an Axis lock. Doug Ritter designed a great little blade here. However, the handle is too short (&I have a small hand), so I fitted a G10 scale on, with about 3/16"
additional length.(a real test of my abilities) Now, this is one great carry.

Small Regular Sebenza:
What can I say about the Sebenza that has not already been said? The most sturdy blade of the lot, built for "work". I am not fond of hollow ground, but it is acceptable. It's a bit harder, than the rest, to open and close, but there is nothing I can do about that. What I like best about the Seb is, it's simple, straightforward, and built rocksolid. It's also pretty enough to be a gentleman's knife.

Yes, I feel on top of the world with any of these in my pocket.
