I inherited an old knife from my dad but for the life of me I can't find out any information about the company that made it.

The tang is stamped with I. HOFFMAN over TRADEMARK over GERMANY and includes what is apparently the company logo which appears to be a beaver, rat or cartoon mouse to me.

Any information would be appreciated.

Maybe someone will come along with more information. But my general understanding is that during the mid century post war years there were many small short lived knife makers coming out of Germany. There are a lot of very similar (patterns of) knives made by many makers from that era. One of my most treasured knives is a mid-century K. Tragbar knife from Germany, and I have never been able to find information on the company.

Klaus Tragbar made a lot of fancy kitchen cutlery (carving sets) in the 40s and 50s, most with carved stag, some were silver plated.
The Hoffman mark is a seal. I'm not sure the name is the maker though. There was a Hoffman Hardware in California many years ago....maybe they had knives made for them? Pictures would certainly help....
