I have been out of the hobby for close to 10 years. I have some blanks that I made that have been "heat treated" meaning they were quenched, possibly tempered but I am not 100% sure. I also have no idea what type of steel it is. My kids wa t me to finish one, so here I am. I have a evenheat kiln which I was brushing the dust off to try and remember how to program it but I dont know what steel it is. I was curious what some advice would be in terms of turning it into a usable kitchen knife. I am positive that it isnt any super exotic steel variants or stainless (small patch of rust i have to sand off)

I am thinking it would probably be a good idea to do a "do-over" and anneal, then quench then temper.

Do you agree? And what temps/times would you use for unknown carbon steel variants?
 
There's nothing wrong with doing another temper at 325-350 if you're sure it was hardened.
