Love the new knife, originally bought the Chive but found it too small for my hands. Getting used to the slightly slower action on the leek, but I like it.
Here is the sad part: I tried to do a little freehand sharpening on it a with a small hone (obv. clueless), and it hasnt been working out well.
I've done some research and found that I need something to control the angle, I need a rough hone and a smooth hone, and I should also think about increasing the relief. (let me know if any of this sounds off)
I've looked at different sharpening methods, read some guides and such.
I am thinking of either buying a sharpening guide clamp (Razor Edge- Cub) in which case I will also have to buy a couple of decent hones as well. Or getting a Crock Stick/v-system setup. I like the simplicity of the v-system, but i'm not sure if i'm going to be able to break in the modified relief with that system. Where as the Guide Clamps and a rough stone seem like they would allow me to do that. (It may also be that I am misunderstanding the process of grinding in a more acute relief).
Please let me know, I'm pretty new at this. Btw, should I even worry about the relief on a Kershaw Leek?
