Hello everyone! I recently completed the first nakiri from my shop for a client as well as a steak knife for my wife. She loves jade g10 (so do I)! The Nakiri is 0.080" AEB-L at 63HRC with a "D" shaped walnut handle. The steak knife is 0.050" D2 at 64HRC and is ground for just one purpose.....steak cutting. I'm excited to see the performance of D2 that thin, that hard. Thanks for looking!
