Just made a new Nakiri for a chef in Georgia. It is about 6.5in(165mm) long and 2.5in(63.5mm) at the heel. I used M4 steel for this one and deferentially heat treat to around a 64hrc. This stuff is unbelievably hard and tough. It is .010in(.254mm) at .25in(6.35mm) from the edge, super thin... The handle is Ironwood and African Blackwood with copper and G10. I also attached a video at the end you can click on and see how she work. I am pretty stoked at how this one preforms. Probly going to have to make one for myself.

M4 in the kitchen! I'm lovin' it! CPM M4 or regular M4? Heat treat done yourself? Sweet, man. Good lookin' work!

Thanks guys. It's CPM M4. I have Jeff Mutz at tru-grit do all my heat treat. We did a differential heat treat using clay on the tang area and oil quenching. Then a triple cryo and tempering. I havr been really impressed with this steel so far. For something this hard it is really tough.

that is sweeet! nice work.
