I have really been enjoying making the kitchen knives, check out this one!


Style - Modified Nakiri

This one is not traditionally ground as it has a hollow back bevel (urasuki) and a visible plunge. The main grind is taller too... all of this works great for precision slicing. It is very thin behind the edge ("sings" when honed) and can be sharpened by laying flat, I would say the Ura is on the deeper side.

I used some really good looking handle material, I think it is bias cut micarta. It feels great in the hand and looks awesome. The handle material is light and has great grip even when wet. The handle is a Coke Bottle style and feels great in the hand. I received the material from a member here and I have to say I am impressed!

I put a ton of time in on this ambitious project and am very happy with the results. The finish is a user finish, it is somewhat high polished in the right places for food release and a nice feel when slicing. I used flared stainless steel tube ground flush to secure the handles, since I ground the tube it came out a bit funky looking compared to my normal method. Everything has been hand sanded a ton and the knife feels great! The spine and heel are comfortable and well polished. I'd consider this a real working knife that will feel great and work well all day long. I brought the edge to 2000 grit.

I took these before the handle was oiled, you can oil just the blade or the handle too... it is grippy either way. The handle stays darker unless it is really scrubbed a few times so you have options for looks! This micarta is the coolest either way.
















 
I really like this one. Maybe I need to go back on that all meat diet, just to justify buying it. :D
