naniwa vs norton

Getting a sharpening setup...will do everything from the german kitchen knives, straight razors to some more expensive custom stuff.

Will get a DMT coarse dia stone in 8 or 10 inch, mostly for the bad off stuff and some workshop tools.

Here is where I am lost...

Option A - Norton 1000 and 4K/8K combo
Option B - Naniwa 1K/3K combo and 8K finishing

I know I will get more milage out of the 1K Norton vs a naniwa 1k/3k combo...but general use of the stones. I know the nortons need to be soaked...what about the naniwa? I know the norton stones need to be leveled, but do the naniwa need this as well.

Also...is a 12K stone work it or just strop with DMT 1mil compound?
 
naniwa... it will be better in every respect.

my usual progression for kitchen knives is 1Kshapton, 5K naniwa SS, 10k naniwa SS. i use a shapton at 1k because they are harder and wear less, for polishing naniwa will get you the brighter mirror finish at every level.

1K naniwa is 1 micron, it leaves a very clear mirror polish, you really have to play with the light to see scratches without magnification. a strop will erase the last scratches but it's not that important. the most important use for a strop is getting rid of the residual micro burr that may be left after 10K and correcting any slop on the stones.

as far as coarse stones, if you can source a 500 beston you'll have one of the best all waterstone setup available... but nothing to lap your stones. a 1K stone can erase scratches as coarse as XC dmt so avoid the DMT C as you won't be able to lap your waterstones with it. a D8XC is your best bet imho.
 
so is that use the beston to lap or the dmt xc to lap?

or use dmt xc to lap all stones and the beston 500x to reprofile>
 
the DMT XC can replace the beston, i just suggested the beston because i hate working my high end, ultra hard and ultra thin kitchen knives on coarse diamond plates but it's just me. i prefer a full waterstone setup, but you'll still need something for flattening. again, it's just me but i feel that i get better result by sticking to comparable abrasive medium from coarse to finish.

for lapping i only use DMT XC or XXC plates, that's the easiest way to be sure your stone is actualy flat. and XC is also very good for reprofiling. XXC flattens faster but isn't recommended as a coarse stone unless you really know what you are doing.
