Need a *Qualitity* knife for butching/dressing

I've been helping a co-worker with some butchering tasks lately, mostly poultry and small game. He uses a knife that resembles a thick fillet knife, but not as long. I've checked some sources, but not sure who makes a good dressing knife for this type of butchering.

Any suggestions??

You are looking for a fillet or boning knife. You will have your choice of thick/thin/stiff/flexible and variants in between. You should be able to get what you need at any restaurant or butchers' supply. I prefer flexible for chicken (I use a Kershaw 5" fish fillet knife for that) and stiff for most beef and pork boning I do. Get a knife with a bonded handle so that no meat bits can stay with your knife. Forschner (Victorinox) has as good a value for money as you're likely to find.
 
I agree. Forschner makes a great boning knife as does Dexter Russel. You can get a very good one for 20-25 dollars.
 
www.dexter-russell.com doesn't make "A" boning knife , it makes a whole series of them. My 5" stiff blade I find more useful for deer and smaller animals. D-R is the biggest maker of commercial knives for butchers etc.
 
Thanks for the great replies!! I'll check these knives out. I knew there was a specific type of knife used for this sort of thing.
