I need to find a santoku knife for preferably right at or under $100 for my step dad for christmas. this is the range i have for gifts, and i know it may be a bit limiting, but any help would be awesome. ive been looking at the Shun Classic Hollow Ground and a few Wusthof knives, but im not particularly familiar with kitchen knife bands. thanks!

Shun Santoku times 1000. Best kitchen knife I've ever had. Versatile as hell. It's my main kitchen knife it's all I need.

Global also makes nice ones in the Japanese fashion....I`m pretty sure I could perform surgery with mine if the need ever arose.... :-)

Global and Shun are indeed very good choices.
Here is a very good alternative: Herder Santoku. Herder is the German brand of those famous small "windmill" kitchen knives, and they also make a hyper capable Santoku which is remarkably thin and light.

awesome, thanks for all the help, im leaning towards a Shun 7 inch Santoku that i believe is about 80 dollars, thanks for all the help!
