Does anyone have any idea what this knife is? I know Alton's partial to Kershaw and Spyderco, but this doesn't look like either.

As I stated in the kitchen knife thread, the only celeb chef that I would trust to give good advice on knives would be Alton, because he's a knife guy. In Feasting on Asphalt he used a Kershaw Blur- during Feasting on Waves, a Spyderco Salt. He often uses various Spyderco and Kershaw products on his show.
I think Bourdain has the right idea as far as kitchen cutlery goes. Wusthof and Henckel if you will take care of it and want to impress people with your top end knives, and Global if you want something scary sharp that you can run over a stone every few weeks.
