Need help on how to remove effects of rust + worn scales

I bought a few old traditional pocket knives from an old lady I work for, and I'm trying to get them cleaned up and looking good. They're covered in rust that I can get off, but once it's off it leaves grey splotches. Is there a way to get rid of them? Also, there's rust in the bottom of the handle where the blades rest, is there a way to take a traditional knife like a trapper apart that doesn't damage them so I can get to the liners easier? If not, what would be the best way to remove that rust? Also, there's places where the bone scales are discolored/turning white, any way to fix that? I know nothing about traditional knives. ._.
