Need help on restoring two knives

First- they aren't custom knives. They are factory kitchen knife blades that someone put laminated wood handles on.
There are no "missing chunks of stainless." There is no stainless steel there. The blades are carbon steel, and those are rust spots.

Thanks for the reply. All I knew was he bought them from a knife maker and that they have the knife makers logo embossed on them. Any ideas of the best way to remove the rust and pitting?

As for what I thought was a stainless coating is that just a mirror polish? I can feel a bit of a ridge where the polish is missing.

One of the easiest ways to clean the tarnish off blades is with the above product. I use this on all my carbon kitchen knives and it is an amazing product.

For the few dollars one of these cost and an hour of your time, it might be perfectly acceptable to you. Since your interest is sentimental and these knives are not really valuable in the monetary sense, give this a try.
