I want to get more serious about keeping my knives sharp, and I've done research on different systems, stones, etc. and I think I've hit the point where I've overanalyzed and things have just blurred. I'm looking for a set of 6" stones for a Hapstone or TSProf sharpener to sharpen folding knives with S30V, 154CM, CPM-D2, M390 as well as fixed blades with 1095, SG2, VG10 and some more "standard" kitchen knives.

Knowing there probably isn't a 1 size fits all solution, what would be my best bet for sharpening that group and where might I struggle (or potentially be overkill)?

Sorry for another one of these, I just need some help and my head is spinning. Thanks!

one of the diamond stone sets that either of the two sell might be the best choice it will work on simple steels like 1095 and the others with higher hardness and wear resistance the diamond stones will of coarse cost more and I'm not sure what grit you want the edge to reach but that's what I would consider.

I normally take my edges up to somewhere around 600 to 800 1000 grit at most then strop with polishing compound

Buy diamond. They'll sharpen everything on the list.

150, 220, 400, 600. (150 grit is aggressive. What you use to reprofile or deep chip removal. 220-400 will be your most used grits. 600 is a finish grit)

Optional, 800, 1000, 2000. (Polished edges on s30v and lc200n. Because only a few steels do better with a polish verses a toothy rough edge like 600)

Grits over 2000 are Japanese chef knife territory. (You don't need them)

Upgraded diamond is GBN. Starting at $75 A stone. Going up to $100 each. They're the ultimate. In both edge finish and the rate they remove metal.
