Need Help Restoring A Knife/Sword

I would suggest leaving the knife as is. These still retain collector value. The kind of work you are suggesting would turn the knife into raw scrap for a new project. Not only would you destroy the remaining value , but the new knife would be limited by the existing materials. You would be better off to have someone make the knife you want from scratch. You would get to keep the original intact as a template and gain a new knife made from the latest quality materials.

I'd leave it too. The blade is always going to be a reground sword blade, and look like one no matter who regrinds it. The stag is great though. If you're dead set on it, you might see if http://www.weber-messer.eu/store/index.php?cPath=7_150 has anything that might work, they're one of the last firms I know that offer hunting sword parts as part of their selection.
 
Some people can't leave well enough alone.
As N2S says- have someone make the knife you want, and leave this one alone. It is what it is and nothing you can do will make it any better.
Removing the engraving alone would be a major task.
 
I would also advise against doing anything to the knife. I know some folks actually collect cut-down period blades like this one. There definitely is collector value in it.
