joe sixpack has no clue about that... all most people are aware of is plain edge or serrated.

granted... the people here are not "most people".


anyway, much like choosing a rifle, pistol or shotgun, the first question to answer is; "what's if for?"

some (more specialized) tools are good only for specific tasks, others are ok at many things but not great at any one thing.... so choosing "the right tool for the job" will have a big affect on how the tool performs at that job.

Explain to the people listening why a custom knife costs more than a production knife(on average)

Differential Hardening,Better grade steels,Better heat treatment,etc

Most people I meet who are not knife people are agast when I tell them the cost of the knives they are holding of mine is $200-400

but when they use them--THEY UNDERSTAND

Try to explain what a custom knife maker is able to do
