How To Need new handles!

These knives are excellent kitchen knives. I can't find anything else like them! I need new handles on them desperately. I have no idea where to start. I need help, please...

I would prefer to not use wood, but I can if that is easier. I don't know which rivets to get either. I don't even know where to start😩...

 
Search for cutlers rivets. Most knife making supply houses have them. Look for stabilized wood, Micarta, or G10 for material to replace them with. Pretty sure from the picture these aren't scales where each side comes off they look like a routed channel.

Scales are easy, a routed channel for the blade is more of a challenge.
 
First thing I would do, is to determine whether the knives are worth the work. The edges look pretty ragged, like they started life serrated, and were rather beaten up. They can probably be reground to a straight edge, with care. If they are salvageable, then spideyjg's suggestions/cautions come into play.

Good luck with it, and let us know what happens. Whatever else you do, keep them out of the dishwasher.
 
I'd flat grind them, reprofile the edge, and give them micarta handles, with brass pins secured by tough and waterproof Gorilla Glue. Three hour project, maybe. You can do it!

The knife edge is excellent with cutting. There is seration (?) on them that I cannot find on any other knives. These are very old, my mother had them before I did. The only thing wrong with them is the handle. I still use them to peel potatoes and cut a steak. I will not use a different knife for this. Other knives just tear the meat or potato and these slice through like butter! So, to me, they are worth it. Thank you for your reply.

All I need is a new handle and know-how, lol. The cutting edge is great. How do I find the size pin I need? Thank you for replying!
 
Just measure the pin holes with calipers and then look at any knife supply outlet for brass pins . I would go slightly smaller than the hole size (Gorilla Glue expands - get the white stuff, not the super glue). And micarta is easy enough to work with. I cut mine with an angle grinder and 1/16" cut off disc. And shape it on my 2 x 42 belt sander with AO belts. You can texture it with a dremel too if you want to add grip. Example:
