I'm looking for a decent tool to help me sharpen my knives. I have a good stone and diamond stone, but am not to faithful in my ability to keep the angle the same while sharpening my blades freehand.

Can anyone recommend a really good set up to sharpen pocket, kitchen and work knives? I hear that Syderco has a good system but I've yet been able to find anything in the local stores and wonder if I'll have to buy online.

Any and all tips, links, suggestions are oppreciated.

Thanks,
Eric

Ahh, my favorite thread...by now I can type the answer blindly: Sharpmaker.

You can buy one online from www.newgraham.com. Very reliable (that is the understatement of the century) and good prices too. Especially if you have already a coarse Diamond or other type stone you should be all set. You can reprofile to a <15 deg angle per side with the coarse stone. doesn't really matter if you slip a few degrees, as long as you stay below the sharpmaker angles. Once you have formed the burr in the reprofiling you can go to the sharpmaker and do the usual thing and get your blades really sharp.

I'll give you the other answer. The Edge Pro Apex. Its so much more versatile than the Sharpmaker (I have both).

www.bronksknifeworks.com has a nice Edge Pro Apex set up with 4 stones, extra blank, polishing tapes, video, carrying case, etc. that'll allow you to do whatever you want. Though more expensive than the Sharpmaker (though not really if you add in the Sharpamker Diamond Rods which you'll need if you have to do any amount of reprofiling) IMHO, its the only way to go.
