This thread might do better in the knife maintenance and sharpening forum or Shop Talk.

If you do want to use a Belt sander for touching up your SOG's, I see no problem with a 1x30 belt sander. I have one for leather work and working over edges. 400 grit belts are great for sharpening stainless and carbon steel. 600 grit would be even better for stainless.

I use a 120 or 180 grit belt for modifying or fixing edges. I get the knife close to what I want with the course belt, then switch to a worn out 400 to finish the work and put the edge on it. You have to keep the edge cool while using any power tools so that you don't mess up the heat treat and tempering. Going slow, dunking the blade in cool water when ever it gets warm and watching your angles really helps.
