Need Some Help Sharpening

Just got an EDGE PRO APEX from ups today . :eek::eek::eek:Want to start off big with redoing my CGBM and then a couple of GM what angle should I do the mistress out at and what about the GW's .Thanks for your help .Gerry Any hint or help ful tips needed , pics any help would be BIG .

Are you sharpening because it's dull, or reprofiling the edge? If you're just sharpening it up, I'd keep the same bevel that's on there. Reprofiling, then I'd still keep it at a 20-25 degree angle. I wouldn't think you'd want to thin the edge of the FBM chopper too much.

I was having a hard time with mine at first as well... here are some tips I found useful:

-Practice first on a fairly dull knife that you don't care about screwing up
-Try to soak the stones before using them
-You can never really use too much water to wash the stones on the Apex
-Be sure to flip the blade over and do the other side so you don't create a huge bevel on one side

The GW is not a chopper, so I would go to a more acute angle on that one.
 
Another tip I found very useful: Use an old square casserole dish to set the Apex up in. Makes cleanup nice and easy. That way you can wet the stone every couple passes and not worry about water getting everywhere. :thumbup:

Also, you don't need to use as much pressure as you think, but you'll notice that as time goes on. :D
