Need to change the profile on a blade

Ok, so I have this blade made of ATS-34, it's a fine knife but I want to change the shape of the guard/choil. I don't have a grinder but I do have a hand held Mikita belt sander. Can I do this with the sander?

Also, what grit belts do I need to take it down and finish it?
