Some kind soul on rec.food.equipment mentioned that the folks here might have some insight into the Nenox / Nenohi Chef's Knives. Has anyone worked with these before? Esp. the S1 ala http://www.knifemerchant.com/products.asp?manufacturerID=51
They're very pretty, but approximately $200 more than a carbon steel Sabatier from Amazon that I know can take a razor edge. Has anyone used them? Good / bad / indulgence?
