I'm new to the wonderful world of knives and had a couple of questions. First of all I've bought a couple (cheaper) knives previously and was wondering what the best method for keeping a good edge on them is. Secondly, I am wanting to have a knife made but have noticed there are many choices on blades. How does one pick a good one. I want an strong blade (i.e.-puncture and cut a can of vegetables) and one that will keep a sharp edge. Any help would be appreciated.
