I just got a BM 710. Fit and Finish is great. I have read that the blades are not sharp from the Manufacture. That was not the case with mine. The edge is paper shreding sharp and the grind is smooth. Maybe BM heard the complaints. Overall I am very happy with this knife.

Question for BM 710D2 owners:

What edge angle do you like to sharpen your 710D2 to?

I sharpen mine at 40 degrees (I think? the Larger angle) on the sharpmaker. If I try to shave arm hairs it takes my skin with it.

I would say between 30 and 40 degrees, but for that knife I would lean towards 30. D2 holds its edge for a while so 30 would be optimal in my mind. If you are going to be using it harder and want to sharpen less often, I would go 40.

I use 30 on mine then a couple super light strokes on 40 with the white rods for a slight micro bevel before stropping.

Mine is one of my sharpest knives.

I keep thinning the edge bevel every time I sharpen it, waiting for the point that my regular usage causes chipping, rolling or denting. I think I'm down around 9 degrees per side , so far so good though :D. I do leave about a 1/3 or less of the blade near the pivot at a more normal 15 degrees per side for harder work if necessary. I've been very happy with the edge retention on the D2
