New Gift - Laguiole en Aubrac

I've been a knife guy for many years, so when my wife took a trip to Paris recently, I asked her to see if she could find a knife to bring back for me. This is what she picked up.







It's a Laguiole en Aubrac, I don't know much about them, other than they are from France (obviously) . paperwork says it has an olive wood handle. Does anyone know much about them?

Now I own many knives ( mostly modern folders) this is only one of two slip joint knives I own. But wow is this ever a gorgeous knife, I'm sure my photos don't do it justice.

It feels thin in hand, but very comfortable ergos, blade shape it's fantastic

I have an ebony Laguiole, it's a nice knife. I agree with you, the blade shape is great and it takes a very nice edge.

Congratulations. I've got a Laguiole as well and it's a wonderful knife. Only thing it needed was a good sharpening. Enjoy it!
