Welcome. I'm trying to get back into cycling myself. Just changed out the nubbies on my MTB for road tires. Been on the stationary bike at the gym - can keep up a 21 mph pace for about 30 minutes, but I don't think it's going to be the same as being on the road. I wish I could do it like my mom used to; she was a long distance cyclist, used to go from Glasgow up to Glencoe, Sterling, Perth, Dundee, Corrouer and other places back in the 20's and 30's.
Anyway, what did you have in mind for a knife? I started small with a couple of skinners using pre made blades and made the guards and handles myself. Then I went to the really small and made a couple of minis. I have also replace the handles on an old beat up Schrade lockback. Knifemaking has taken a distant back seat to work however.

How to Make Knives by Barney and Loveless
All have great info, though some of the materials sources listed have gone out of business in the last 10 years.
Other books that might be of help are:
The Home Machinists Handbook,
Small Parts and
The Complete Metalsmith.
One or two on Jewelry making couldn't hurt either.
Also you could look at Blade Magazine and Knives Illustrated where you can find a list of current suppliers.
