New here....wanted to say hello and questions

Hi guys. So I'm new to higher end knives....I got fed up with trying to fillet my Walleye with cheap knives so I bought a Shun 7" Premier fillet/boning knife just the other day.

The first thing I wanted to ask is did I make a good decision? I know nothing about these knives. I was told that they take over 100 steps to make this knife and it is folded strong steel with a very good edge. They claim Damascus steel..but as far as I know no one knows how to actually make real Damascus steel...is this true? I'm confused.

I want to get the rest of this set..but damn pricey. I'm hoping they are worth it.

Anyway...just looking for input and wanted to say hi to you all. Thanks !

That said...Shun makes a fine knife. It should serve you well.

I got 3. An Onion designed carver, a Classic paring, and bread knife. Use them on a regular basis.

Shun are great knives. But few cooks need complete sets of even the best knives. As you get good in a kitchen, you see which size and type of knives you enjoy working with, and don't need the intermediate knives. Get the ones that fit your specific tasks.

This saves a lot of money, too. :)

Damascus is a whole other subject. Do a search in General Knife Discussion and in Shop Talk. Damascus today is a term for steels that are a mixture of others. Depending on how they are mixed, and which steels are used, they may be merely decorative, or they may be good working steels. Also do a search for wootz.
 
I use my Shun knives all the time, they can get very sharp. I have a few global knives that I prefer but thats another topic. Shun makes a great knife, just maintain it well and it will last you a lifetime.
