After a trade with Marcelo and then following a link Pitdog posted a while ago, I've managed to add a couple more NICE knives to the stable!!!
The smaller one (on the right in the first couple pics) is by Dennis Jenson (DJJ here on BF), and it's 8 3/4" of 5/32" ATS-34 with a 4 3/8" blade, Curly Maple scales, mosaic pins and a full height convex grind. I was initially a little worried about the finger groove fitting my fat hand, but it turns out they're just about perfect! The only thing I would change about the handle (as well as on the Kephart) would be a slight bevel on the front on the scales down to the blade, but that's an easy enough mod if I decide it's necessary-I'll just ship it to TF to do:foot:
The larger knife is Kephart from ML knives. It's 9 3/4" long, forged 1/8" 1095, just shy of 5" tip-to-scales, with osage orange scales over white liners. The handle is huge, almost an inch longer than I need to get my whole hand on there, but it's comfortable, versatile, and the osage is beautiful!
I've used them each to make a batch of cabbage salsa (no action pics, my kitchen is a mess
) to get a feel for them. The ML had an advantage quartering the cabbage just due to the length, but the DJJ's edge was able to lie flat on the cutting board so it was slightly better chopping the cabbage up. After that they were neck and neck, though I've got to admit that I was pleasantly surprised with the amount of control I had with the point of the DJJ knife. I assumed with the tip being below the centerpoint of the blade it would take some getting used to, but it turned out to work great in the kitchen! The grinds are very similar, and both sliced and diced well. The ML has a slightly flatter convex, possibly owing to the greater blade height, but the Jensen is by no means excessively thick behind the edge and there is almost no transition from grind to edge.
Anyway, on to the pics!
I definitely recommend checking out either of these maker's knives-they both know their way around a blade! As soon as I can hobble my happy butt off the beaten path I'll get some more exciting pics of both of these outside where they belong
