Personally, I am not much of a Shun fan. I think for the money you can do much better. Also, not a santoku fan. Gyutos are much more versatile. They have a nice tip while santokus usually don't have much of one. An inexpensive Chinese slicing cleaver is also more versatile if you don't want a workable tip.
In that price range, if you are wanting stainless, I recommend looking at Suisin INOX western (yo) or a Yoshihiro (wa) gyutos. Their is a great place in Cali that sells a little higher quality of Yoshihiro that is rebranded since they have them made to their specs.
