Just finished these up. The largest is 5160, the other 2 are 1075, all three with tan micarta handles. These are the first hand satin finishes I've done! Man, what a workout:D My fingers hate me!

good looking blades. i would probably bring the grind all the way to the little gaurd like you did on the smallest one, but they are good looking blades that probably function great.

stock removal or forged?

These are all stock removal. I've been working on forging some knives, but I don't yet have the control I'd like over everything. On my smaller knives (sub 6" blades I usually do away with the choil, but on these larger ones I like to have the option of choking up for delicate work. I can see why some prefer to bring the edge right up to the handle, though:thumbup:
