I am very new to knife making(Hobby) and have been making hunters , puukos and neck knives over the last year or so doing all my work with hand tools ( files , hacksaws ect as I don't want to work harden my steel).
I have read up a fair amount on making kitchen knives as I would love to make a few and it is always recommended that the steel be heat treated before grinding bevels in due to the thickness of the steel used.( working towards getting a belt grinder when funds allow)
Could I use O1 , file in my bevels and send it off to heat treat and Finnish up with sanding. I would appreciate any advise on whether it is a appropriate steel for kitchen use ?(I am thinking of O1 as I believe it doesn't distort as much during heat treat?)
