Hello I am new to knives and I want to learn all about different types makes and materials used. Anyone recommend any good books or websites? I like to read from a book preferably. I could start with a google search but would like your opinions so I dont start completely blind! Thank you.

When I first got into knives, I browsed Bladeforums in one tab, and had Google open in the second. Whenever I came across a term I didn't know, or something I wanted to learn more about, I looked it up.

... not exactly what you asked, I know, but it worked for me.

Spyderco.com has a lot of good stuff...on types of materials used in scales, lots of different blade-steels, types of blade-designs, etc.
And, of course, you can learn a ton by migrating around on this site to the various forums.

How recent is Knifeart's steel faq that you linked? It doesn't go into any of the more popular newer stainless steels (VG-10, 154CM, S30V, S35VN, etc) at all and the descriptions of the 440 series seem a bit outdated to me...correct me if I'm wrong, obviously.

No, you're correct. It's old. Most of the information on carbon steels is still correct, (though it obviously won't have any of the newer alloys,) but stainless has advanced significantly enough for that portion of the article to be substantially outdated.

There's good general info on some company sites as well as on A G Russell's site. Check Benchmade and Spyderco company sites for info on blade shapes and grinds, handle materials, and lock styles on folders.

Also, if you're into traditionals, Case's web site and the Case collector's web site will have a lot of info on the various traditional patterns.
