I'm new to slip joints and traditional knives. There are lot's of new thing for me to learn.

I have a GEC 85.
Will slip joints loosen up over time with use?

They generally do. Make sure you routinely oil the joints (less really is more) and that it gets plenty of pocket time.

Welcome aboard!

I have opened the blades to the point with the most tension and set it down for a week. It felt easier I guess. I know some knifes are just nail breakers, nothing I know that you can do about that. I remember when I first got back into traditionals when I found my old scout knife. I thought it was pretty tough to open. Got some new knives and after a month or two I picked the scout knife up again and it wasnt hard to open at all. Guess my nail had got stronger opening the blades all the time.

How do you mean, "loosen up?"
Get wobbly?
or get easier to open and close?

They don't tend to get wobbly.
They do tend to get easier to open and close.

They will get easier to open and your knife opening nail will get stronger.
my right thumbnail is so much stronger than my left one it's not even funny.
In the meantime, pick up either a knife pick or a P-38. I recommend the P-38 because after you don't need it as a knife pick anymore it still has dozens of uses.

Are the joints oiled and clean from grit?

The knife get easier with use
But
If after a time of use or the opening is still very strong (nail breaker)
Then wrap a tissue round the blade to protect yourself from the sharp blade,
And open and close it lots of time as you watch TV
(That is lots and lots)

If it is still very stiff, then do as Rockgolfer suggests
Open the blade so it tensions the back spring
and leave the blade a few days open like this
The blade will counter tension the spring and make the spring weaker
