decided to make a vid of sharpening this 8" Henckel's chef knife. Progression: Shapton GS 120, Shapton GS 500, Arashiyama 1000, DMT 1 micron diapaste on cowhide. As you can see in the vid, it was a beat to hell edge: factory grind, uneven bevel, broken tip, damaged with a carbide V sharpener, and dull. Set a new bevel and reprofiled a tip with the Shapton GS 120.

Thanks! There's a dearth of videos showing technique which is so important for individuals figuring it out on their own. You must be good, wiping the knife on your belly. I don't use my shirt any more.

Thanks. I regrind a lot of tips, so I've gotten efficient at it. I still need to work on getting bevels perfectly even from side to side and heel to tip.
