New Year Resolution. Need new knife.

My New Year Resolution is to eat more fresh fruit. I'm planning to add some apples, pears, oranges, kiwis, etc to my lunch box. It's also a great reason to buy a new knife.

I'm looking for a long, slender, cutting blade folder. It must be non-tactical looking as not to upset my coworkers. I looked at some Texas tooth picks. However, I really want single-hand opening (no Opinels). Good steal (D2?) for a razor sharp edge. Under a $100. Fontenille Pataud has some single-hand Laguiole knives in their Nature line. Regrettably, they are way out of my price range.

Any recommendations?
 
My recommendation is to choose a people friendly color in a Spyderco Endura with VG10 or ZDP blade steel. They are fairly long, thin, super light, and slice like a razor with their full flat grind. If anyone gets nervous at the length of the blade, point out that it's shorter than any of their kitchen knives.
 
Thank you for this recommendation. I do however want something a bit more "traditional."

Al Mar - they carry traditional-looking lockback models with thumb studs for one-handed opening.
 
you might can buy a used moki or al mar for less than a hundert. but as a laguiole freak-- nothing beats em. you can in fact buy a reasonable lag used on auction sites- i'd recomend nothing less than 10 cm, t12 steel or 12C27 are easy to sharpen and maintain. there are prolly 10 branded lags out there that are great quality.

new- clearly over a hundert to even begin to start the ball rolling, used- beat the bushes you can get a nice one for a 75.-100.
 
AG Russell Rancher. It's the perfect, great price, edc and a nice SS blade too.
 
I know it's cheap but I edc a kershaw chill at work with no problems. I picked mine up for $12-13 on amazon. But it works good.
 
1660CB, Kershaw composite blade leek with D2 cutting edge. Its a smaller knife, and doesnt look tactical, slices well and is easy to open.

Up until you said one-hand opener, I was thinking a melon tester would be perfect. Seeing as it's designed to do exactly what you want it to do, plus it's traditional and 'non-threatening' to boot, I still think it's worth consideration. That is, unless you encounter some fruit-cutting situation where both hands aren't available. A surprise attack from a mango, perhaps. ;)
 
Check out Mcusta knives they are around $100 and give you a traditional look with more modern materials. Very nice offerings. I'd also highly recommend either the Lone Wolf Swale or Trask. I own both and they are great for $50-70.
 
How about Shun's personal steak knife? VG-10 steel, you can pick them up on amazon for just under $100. I've been using mine for a few months at work now, hasn't bothered anyone so far. :)
EDIT; part of the tang extends past the handle of the knife when closed, it is a one handed opener. It comes with a leather carry pouch.
