By the time he was done I was too drunk and hungry to remember to take a pic. This is all that was left by the time I remembered. It will be used in an ajiaco later on today, yum!!!

For those who want the recipe its simple.
-Salt
-Sour Oranges
-Fresh ground garlic
-A bit of fresh oregano
-A bit of fresh bay leaf
 
Outstanding!!! I've been wanting to do a pig roast for a while now! My buddies place has been run over by Russian boars.....I feel there will be a culling soon!
 
You really shouldn't give a dog pork meat, it's bad for them:thumbdn:

THat pig is better more natural to eat for the dog than "canned" dog food. what is "crude" meat biproduct?

The bones are whats not god for dogs, tomany will bind them up and create constipation, and obstruction of the bowls. the only reason i know is becuase we went threw it with my Americanbulldog/pit mix. She almost needed surgery to correct the problem. A couple a week if fine, but every day is not. DOnt do what my fam. did....
Thats the best way to eat meat.... Awesome Job. how much did that sucker weigh? we do a 120pounder every 2 years... try apple juice when merinating. gives it a little sweeter taste.. breaks down the meat better than vinager.
 
Well you beat me to it. Not quite as much volume but plenty of love put into it.

I picked up a Boston butt to break in my new X-mass present.
It soaked in a brine of sugar salt and water over night. The next morning I covered it in my special rub.
I ordered an off set fire box that wont be here for about a week so I fashioned a partition out of tin foil to help with indirect heat.

It worked perfectly. I kept in on at about 250-275 for four hours. When I did a test cut into it the corner and saw I had a nice pink smoke ring I wrapped it in tinfoil and set it back for about 1.5 hrs. Thats when the magic happens, it steams in its own juices.
The final product had a nice bark on the out side and was moist and falling off the bone tender.

Dang now I want to go out and shoot a pig. That looks awesome. The dog looks very satisfied. lucky bugger :thumbup:
 
The pig was only a 40 pounder, we have made 100 pounders before but there is always too much food left over. The smaller ones always taste better too.

Slow cooked a pork butt today... Now I'm so glad I did after seeing your feast!!
