hey guys. we just got a berkel slicer 825a-plus for home/hobbyist use. truly enjoy the machine! I've seen on this forum many experienced slicers, inspectors, maintenance people and would appreciate your advice: what's the best way to clean the knife? the users manual shows the cleaning of the blade and ring guard while it's still assembled to the machine which makes it difficult to get behind it. it's so much easier to clean it all thoroughly after removing the blade but i'm wondering if it's bad for the machine or screws to take it on and of every time.
also, how ofter should the knife be sharpened?
