Newbie heat treat again

I have a basic two brick forge and have been useing O1 steel wire/rods in it. I have only made a few knives so far, all beeing from O1. I use the forge to shape as well for heating to quench in olive oil.
With this basic setup can I use any other steel that does not stain when used like O1. I would like to make some kitchen knives that do not stain. Does 5160 (spring steel ) have non staining properties. Or is there any other type of steel I can use?

Allo mate.All HC steels will "stain" to some degree.O-1 has a nasty habit of rusting if you stare hard at it.Simpler HC steels can be a bit more forgiving,but they all rust and stain.The best way to avoid this is to form a patina on the steel in the beginning.There are many ways.Bluing,etching,vinegar soaks,etc.The dark surface prevents rust and stain formation.
You can work 5160,10XX steels,52100,W-1,and HC damascus ( not make it,but you can forge pieces you purchase) in your simple forge.Stainless,D-2,A-2 will need a better heat source.
