I am just getting started making knives and I have unlimited access to all types of antlers. I have Fallow, Axis, Whitetail, Elk, Red Stag, Pere David and Sika here on the ranch that I manage. Can I use any of these for knife making or are there ones I should avoid? Thank your your input and help.

Axis antler is very good for knife handles it has very little to no pith and is very stable. Whitetail and Elk are used a lot some people have them stabilized some don't. Don't know about the others. It is advisable to always remove any pith by drilling it out or dragging it out with a broach or some other tool. Hope this helps.

Nice, if you have unlimited access, you might make some people happy selling the antlers and fund your knife making hobby

Red stag is currently used as a replacement for semi-rare sambar.
