This year I’ve started knife making. And some things come out and some don’t. But I recently just tried 80crv2 and I think I hit the nail on the head. I posted two videos on Instagram of nail cutting and cutting through a brick with a hammering on the knife. Could anyone check out my page and give me some feedback?
A quick question too, so after heat treatment the file skates across pretty easily, after tempering shouldn’t the file catch a little since the steel is technically being softened?

Ridiculous destructive tests like cutting nails in half and pounding through bricks don't tell you a lot.
Cutting tests like the brass rod test, cardboard and rope cutting, wood chopping, etc. will tell a lot.

Well it was a way for me to test any chipping. As I posted I can’t try the brass rod test until I have a finer edge on the knife.

One thing that I haven't seen mentioned yet in this or your other thread, but was hinted/implied at in the responses is that if you don't have a shaving edge on the blade, your tests don't really tell anything because a more obtuse edge angle will stand up to a lot more abuse than a sharper edge.

It’ll cut skin….. but I can’t slice paper with no effort. There’s an edge, but I think my sharpener flexes too much so I need to put it on my sander for a fine edge.
 
I don't really think you need a "razor" sharp edge, it just needs to be sharpened at the angle you intend to use on it's final sharpening.
 
As far as you question regarding a file catching on tempered steel, remember it's still relatively hard post temper. From Larrin Thomas' book, as quenched 80crV2 should be 62-63RC down to 60RC with a 400F temper.
