Well, buyer beware. I fell in love with my father-in-law's old uncle henry Steelhead fillet knife. One of the classiest looking fillet knives I think I've ever seen. However, by the time I got around to getting one for myself it seems things had changed.
I bought a new one pretty cheaply (that should have been my first clue) and the knife arrived with a curve in in the blade more pronounced than my slicing golf swing. Not only that it was really flexible. I know fillet knives are supposed to be flexible, but not like this, and its not at all the quality of my father-in-law's.
So reading on here I'm learning there is the old good stuff and the new chinese "less than good stuff".
So what do I look for when I resume my search for the steelhead fillet knife I know and love? How will it be stamped? what kind of steel should it be? what is the best question to ask an ebay seller to know if its the make I am looking for?
