Nicest steak knives

What do you think are the absolute nicest steak knives, either production or a standard custom line? I would think the Shun ones maybe? Or the Schaaf?
 
That photo sure didn't turn out well - bad lighting and I made it too small. If anyone wants photos I can email them. If anyone wants to host them so they show up right here, that would be fine as well. I have no interest in it other than to display Davids fine work and show what can be done if you just ask the right person :)

:p I would say that S30V beats them a little in edge retention, but I like the fact that when these get dull, I just slip a new cardboard blade right over the steel blade retainer and it's like a factory fresh blade without having to get the Edge Pro out! They do get a little soggy if the steaks are really juicy...

Seriously, I will try to take a photo with the blades uncovered. I actually took that one so I can remember what wood each is once I have lost the covers in years to come. I plan on passing these down to my boys.
