Ninja Kitchen Skill Videos

yeah, Old Jacques has been doing this for a while. When he was doing his hitch in the army when he was 21-23, back in 1956-58, he was assigned to be the personal chef to three Presidents including Charles De Gaulle, so you know that the lad had some of that natural talent.!!!!

Jacques died a couple of months ago or so. I met him once to sign a book, think it was his 1st english language book. La methode/ He was very gracious and just terribly nice overall. I remember thinking he had the hairiest forearms I had ever seen. He was a great ambassador for the profession and lived an amazing life. He was still riding motorcycles up to a couple months before he died. Just a hell of a gentleman.
 
He appears to still be alive. People on the interwebz have apparently been claiming that he has died for at least 5 years. As Mark Twain actually said, "The report of my death was an exaggeration." ;)

Very cool videos. To digress slightly, it reminds me of watching Martin Yan on Yan Can Cook as a kid. Fantastic knife skills, though Martin Yan would get a little wild and you'd end up convinced he was gonna be missing a finger by the time the segment was over.
 
Anybody have any idea what brand of knife he's using in these videos? The handle to blade ratio looks pretty close to what i'm looking for.
 
Not sure about the Japanese looking one with the wood handle, (maybe a Shun) but the one with the black handle looks like a Zwilling Kramer. hard to tell as he doesn't put that one down but it does have the brass rivets.. In the past, he has been seen in the company of Wusthofs.

I looked at the still pics. That definitely looks like a ZK. If you look beside his board, he pretty much has one of everything. It looks like he uses a couple of his Wusthofs too.
 
Thanks jdm61, I am so relieved. My one brief interaction was so pleasant and he is such a good ambassador for the trade. I have long admired him and not just for his rapid chicken boning prowess.
