Nitro-V - Unobtainium???

Z-FiNit has a good amount of nitrogen (.5%) and is vacuum melted so it is very clean. Vanax has lots of nitrogen (1.9%) and is made using the 3rd generation particle metallurgy process.

Chuck

Both are excellent steels, roughly equivalent in performance to aeb-l and S35VN, respectively.

Jarod, how hard have you been able to get AEB-L?

It seams to vary by batch, which is why I allways recommend people don’t just go off the the charts. But most times I can pull a solid 63+ with a decent temper. I have gotten harder but it’s not consistent between batches. We are playing around with a few tweaks to see if we can push it further but time will tell.

I sent a test knife to Peters and requested 63. They got it to 62, but it was not quite hard enough. It did not hold up to chopping on an edge grain bamboo cutting board at the bevel angle I wanted to use. If I can get 64 I think that might work. Otherwise I'm going to need to switch to a PM steel.

Oh hell, I guess I have to try S35-VN then.

They have the size I want, and it's not as expensive as I thought it would be.

Thanks, I appreciate it, but that won't work. Neither wide enough or thick enough.

I've still got five AEB-L knives to make so I'll just wait and see if some comes available. Besides, I'm really leaning towards S35-VN now that I found some that isn't to expensive.

S35VN is my favorite steel to work with. I like everything about it. It is easy to grind and finish. It is my primary steel nowadays.
