The mechanix pair that I have has been pretty tough. Spent a lot of time in hot engine bays with no real problems. Which brand are you looking at? Manufacturer probably makes a bigger difference in recomendation since Nomex can't be beat for hot/flamable conditions.

Hatch cut resistant stuff...
If you're gonna play with knives...then get cut resistant gloves. You knife is not going to spontaneously combust and burn you, but you chances of getting cut are real high when you sit there like a moron screwing with your knife all day long...
