What about D2, it is semi stainless. If that is cool with you then you can look into Bob Dozier and Darrell Ralph customs. Camillus also makes a collaboration knife, the CUDA MAXX 5.5 in D2. I believe that Queen also makes a nuber of traditional pattern folders in D2.
 
I think most of the carbon steel knives out there are the more traditional type of patterns, such as stockmen, trappers, sodbusters, and opinels. Thats okay by me, I think the humble opinel is one of the best cutting knives out there. Once you carry one for a month you will be a convert for life. I tried one just for yucks in1981 and there is one in my pocket today.
