I recently got a two Norton double side waterstone 220//1000 and 4000/8000. First do you see any stone missing from that lineup? this will be new to me. so far all i have done is the strop or mousepad/sandpaper method. but there are a few knives i want to learn the stone on, such as my scandi knives.
second, i know Naniwa stones go all the way up to 12000 grit. what would you recommend to do, get their stone in 12000 or its not needed? I have heard that their waterstones do not need to be soaked in water before use...
I can get my knives hair shaving sharp with the strop/mousepad, but never hair whittling sharp. If i want to get hair whittling on the stone, what grit should i go for?
